Grain Free Banana Bread

INGREDIENTS:

2 ripe bananas, mashed with a fork

¼ cup raw honey or organic maple syrup

4 eggs

¼ cup organic grass-fed butter

1 tsp vanilla

½ cup coconut milk

½ cup coconut flour

½ cup tapioca starch

½ tsp baking soda

½ tsp aluminum free baking powder

½ tsp Himalayan salt

½ tsp cinnamon

INSTRUCTIONS:

Preheat oven to 365 F. Prepare a small bread loaf or muffin pans by greasing liberally with butter. By hand or with an electric mixer, combine the bananas, sweetener, eggs, butter, vanilla and coconut milk.

In a separate small bowl, whisk together the coconut flour, tapioca flour, baking soda, baking powder, salt and cinnamon. Combine the wet and dry ingredients and mix thoroughly, making sure no lumps of coconut flour remain. Pour batter into loaf pan and bake for 45-50 min or until a butter knife inserted in the middle comes out clean.

Cool 5-10 min in pan and then remove and cool completely on a wire rack.
